French Toast + Homemade Strawberry Sauce

Breakfast foods are awesome, and especially for dinner. ๐Ÿ˜‰ ย Buy a loaf of bread and a dozen eggs and you have yourself a cheap meal. Manyย have a tendency to forget about french toast but don’t put it aside any longer!

French Toast

It’s so easy to make andย is a cost effective meal AND it freezes easily! Just pop it in the toaster to lightly crisp and reheat. Great for those rushed mornings!

What you’ll need:

  • 8 eggs
  • 12-16 pieces of bread
  • 3 TBS water or milk
  • a dash of cinnamon and/or nutmeg (optional)

Here’s what you’ll do:

Preheat skillet or griddle. I personally use an electric griddle because it uses less electricity than a stove AND it doesn’t heat up my kitchen as much, which is always a plus in the summer.

In a shallow dish whisk eggs and water. Dip one side in the egg mixture. Flip and dip the other. I like a thick coating so I leave it in the mixture for about 5-8 seconds before flipping to the other side.

Place the dipped bread onto the griddle/pan. Let cook about 2 mins and then flip to cook the other side. Remove once both sides are a light brown. Drizzle with syrup, peanut butter, strawberry topping ย (recipe below) and whipped cream. YUM!

Homemade Strawberry Sauce Recipe

Yields four (1/3 C) servings

What you’ll need:

  • 1/4 C Sugar
  • 2 TBS cornstartch
  • 1/4 C orange juice
  • 2 C Strawberries
  • 1/2 tsp vanilla

Here’s what you’ll do:

In a large sauce pan, combine sugar, cornstarch, and orange juice. Stir until smooth. Add in strawberries and bring to a boil. Reduce to med high heat. Cook while constantly stirring until it the mixture thickens; about 2-3 minutes. Remove from heat and stir in vanilla.

Cool and then store in the refrigerator. Lasts roughly 9 days properly stored.
